Colombia Jose Lasso Sudan Rume Natural \'Floral Symphony\' Espresso - Single Origin.


This is a competition lot produced by Jose Lasso from his farm El Diviso; in Pitalito, Huila. Sudan Rume, an heirloom Arabica variety originally discovered in South Sudan is prized for its disease resistance and adaptability to Colombia’s diverse microclimates. 


The Lasso family has been growing coffee for generations. José Uribe Lasso is the founder of El Diviso along with his sons, Nestor and Adrian. Over the years the family were able to build the infrastructure to process differentiated coffees; searching for better quality, both in coffee and their livelihoods. El Diviso in many ways is an ideal picture of what coffee farming is in Colombia, with the next generation gladly following in their predecessors’ footsteps and paving the way towards the future of coffee.


Cherries are selectively harvested from the healthiest trees with optimal foliage during rain-free days to maximise sugar content and minimise moisture. Floaters are removed and only the highest-quality cherries advanced.Processing starts with an initial anaerobic fermentation in sealed containers for 12 hours at 16–18°C. This is followed by 36 hours of controlled oxidation in tanks at 36°C, then a second 36 hour anaerobic fermentation in a Biomaster fermenter, which precisely manages pressure, temperature and pH. Next comes a 24 hour submersion in water and mossto mixture using prior fermentations of the same variety using a leachate recirculation system. The process concludes with a 15-minute thermal shock at 60°C to stabilize microbial activity.An advanced stainless steel dehumidifier is temperature controlled to replicate specific drying curves, preventing terpene volatilisation and external contamination while preserving the coffee’s integrity.
