In Menglian, a small border town in southwestern Yunnan, China, nestled at an altitude of 1650 meters in a mountainous region bordering Myanmar, coffee plantations are hidden among primeval forests and layered mountains. Local Lahu, Dai, and Wa farmers have guarded this land for generations, insisting on picking only the ripest, fully red cherries (only fully red cherries are harvested), then using a light fermentation and sun-drying process to allow the pectin to slowly release its sugars and aromas. The Catimor coffee variety is redefined in the Yunnan highlands: already disease-resistant and high-yielding, it encounters cool nights and abundant sunshine here, resulting in an exceptionally bright and refreshing flavor, like a delightful surprise carried by the border mountain breeze.
This coffee bean is affectionately known as \"Little Strawberry\" in the coffee world because the moment it\'s brewed, it truly tastes like biting into a fresh strawberry—a burst of juice, sweet with a hint of tartness, followed by layers of raspberry, sweet apricot, and plum wine aromas, with a lingering refreshing tropical fruit juice finish. As the Hong Kong brand of Nok Bay Coffee, we specially selected this new season\'s beans because we wanted to bring the purity and dedication of Yunnan\'s high mountains to every Hong Kong coffee lover\'s cup, making a cup of coffee not just thirst-quenching, but also like a mini border trip.

• Recommended brewing methods : pour-over V60 / Chemex / siphon (ratio 1:15~1:16, water temperature 88-92°C); also suitable for cold brewing, which will bring out the fruity flavor.
Quick Tips : After light to medium baking, it is recommended to steam for a while (30-40 seconds), and the water temperature should not exceed 92°C, so as to maximize the vividness of the strawberries and raspberries!
