About El Roble


Anayibe Ortíz started working on coffee farms when she was 15; her parents owned and managed the El Roble farm. She inherited it from them (and also acquired 2 additional farms) and now her three children help out around the farm — picking, processing, and general farm chores. The Ortíz coffee dynasty begins!


El Roble is a relatively small farm (but still one with 15,000+ trees!) where she grows a selection of varieties like pink bourbon and geisha. She processes all of her coffees in a similar way. After harvesting, the cherries are placed in bags to ferment for 24 hours, depulped, then put into bags again for another 36 hours to ferment again. After that, the coffee is washed, then dried on raised beds.


The final result is a coffee with a punchy and bright acidity that’s mellowed with a sweet and floral note. It’ll please folks who love bright and fruity coffee while also being an approachable bridge to something that’s a little more adventurous for fans of a more traditional ‘coffee’ taste.
