滋賀県の抹茶を、愉しむ。

滋賀県という土地柄、昼夜の寒暖差があり、標高も高い位置にあります。朝靄がかかるそんな仙人でも住んでいそうなところで抹茶をつくる。丁寧に摘み取り、炉で炙り、綺麗で香りの高い碾茶が出来上がります。それを低温冷蔵庫で熟成します。

碾茶の審査は「味・香り・滋味・から色※」を判断します。※から色とは：茶殻の色の冴えや濃さで判断をします。

抹茶で上質なところのみ

滋賀県にも美味しい抹茶があります。正直なかなか美味しい抹茶をつくるのは難しい。日々の研鑽と気候や土壌。運も必要です。この抹茶慈光を服したとき気が晴れるようなキラキラとした温かい気持ちになりました。慈しむ光という意味をもつ慈光。これが最上ということでは決してなく、もっともっと最高のものをつくっていきたいという通過点のひとつとして名づけました。今後の抹茶がより楽しみになってきました。
